Memorial Day Recipes – You Win Some, You Lose Some

I was SO excited about this coleslaw recipe and making it for our Memorial Day/Birthday Bash last night.

I get super pumped about finding ways to make our favorite foods healthier for our family and friends.

But Greek yogurt as a base for cole slaw was NOT a winner!  It was awful!  The only good think about it was the fresh cabbage and carrots.  Oh well, you don’t know until you try, right?

It was so pretty to start with!

I am not deterred!  I am still on the search for a good cole slaw recipe.  I think I might stick to Broccoli Slaw with oil and vinegar.  Cant’ go wrong with that.

I had my cheat meal last night and it was DELISH!!! I failed to take pictures, because I was separated from my phone, but that was intentional.  We had a lot of friends and family over to celebrate Matt and Kevin’s birthday, and it was so wonderful!

I ate a cheeseburger, some crack dip, a few chips and even some pecan pie and ice cream. And it tasted great!

And today, I made these two fabulous dishes that were SPOT ON!!!

I truy believe in balance.  I eat clean 80% of the time and allow myself treats the other 20%.  And that totally works for me!

I had a sweet and very concerned follower message me this weekend telling me that she was concerned that I exercised too much and deprived myself of food.  As I assured her, I eat a LOT of food!  I just skip out on the junk the majority of the time.

Two years ago, you would catch me at the drive thru no less that 10 times a week.  Eating chicken biscuits for breakfast, Big Macs or Wendy’s chicken sandwiches and fries for lunch.  Sonic Blasts every weekend.  At LEAST two Diet Cokes every day.

Living that way, I was depriving myself of anything nutritional and good for my body!

I am so thankful for this journey!

And today, I definitely don’t eat that way.  But I DO eat a lot of food!  I actually eat more meals now than I did before. It’s just Food that fuels my body, my brain and my soul!

And honestly, I workout typically I don’t workout more than 30 minutes a day.

I used to spend HOURS at the gym and I saw no results.  I didn’t know how to lift weights, and I spent lots of time on cardio. Having no idea that weights could change my body so drastically.

But now I know.  I know that I don’t need to push my body to the limits cardio wise to lose weight.  I don’t need to crash diet to see the scale move.  I don’t need to deprive myself of food to lean out.

And I’m in the BEST shape of my life!  Literally!  Mentally, physically and spiritually.

This has been a journey GOD led me on.  To realize that my worth and value do not lie in a number on the scale or a pants size. But on HIM!

I haven’t stepped on my scale in TWO weeks, and it has been so liberating!  And on top of that, my clothes fit better today than they did two weeks ago.  Because I stopped obsessing.  And eating based on what the number told me.  Read more about that here.

I meal plan according to my portion control containers.  I eat food that fits into them and that I know will make me stronger.  And I’m NOT hungry.

I workout 30 minutes everyday.  I find the time and use my weights because I know it works! And honestly, it’s summertime, and I don’t have a lot more time to devote to it.  I’m home with my boys, and our day starts early and with gusto!

All that to say, that I have learned a LOT about healthy eating and exercise in the last two years. And I have learned to make lifelong changes. No crash diets or bursts of exercise and then returning to what I was doing before.  This is IT for me. The 21 Day Fix and Shakeology are two things that changed my life!

And because of that, I love to pay it forward as a coach!

Life never stops and we are always on the go! You can still make fitness & nutrition a success no matter what your life looks like!! Summer is here and traveling, vacation and pool parties are what we do!
