Mason Jar Salad (gut health friendly)

Ingredients

6 ounces shredded chicken
2 cups chopped romain lettuce
1/2 cup roasted butternut squash
1/2 cup chopped tomatoes
1/2 cup chopped cucumbers
1 ounce roasted pumpkin seeds
1 serving lemon vinagarette

Directions

  1. Add vinagarette and chicken to the bottom of the jar.
  2. Layer the rest of the ingredients, ending with the romaine lettuce and twist top of jar on tight.
  3. Store in the refrigerator 3-4 days.
