Weeknight Steak Fajitas

I ate mine over cauliflower rice and with some Herdes Green Tomatillo salsa.

School, church, homework, and more and I am such an easy target for JUNK FOOD or the drive thru if I’m not intentional!

So each week when I make my meal plan, I make sure to put something EASY and TASTY in the plan for Wednesday night….who am I kidding? This is my goal for EVERY night!

This is such a HIT with my fam, and I am not complaining!

Flank steak or Flat Iron steak work well for this. Both are lean cuts of meat, but not all stores carry both.

Ingredients

2 lbs flank steak
1 tsp olive oil
1 tsp cumin powder
2 tsp chili powder
1 tsp garlic powder
1 whole onion chopped
1 can rotel tomatoes
1/2 cup water

Directions

  1. heat Instant Pot to Sauté and cook the meat in oil on both sides for 2-3 minutes until browned.
  2. Change setting to Manual and 25 minutes and DUMP the rest of the ingredients into pot and seal. (yes….it’s that easy!)
  3. Serve over brown rice or cauliflower rice with toppings of choice. My family loves the high fiber whole grain wraps for fajitas.

If you do not have an Instant Pot…

  1. GET ONE NOW!
  2. You can easily make this in a crock pot as well. Just remember to turn it on 😉
