Summer Recipes and Another Week of My Countdown to Summit Meal Plan!

I absolutely love Sundays.  I wake up excited and ready for worship and fellowship at our church.  We have the most amazing contemporary service at 8:30 a.m., and the worship music is AMAZING!!! It may be my favorite part of the entire week.  Because we have such an early service, we get done before 11:00 a.m., and that leaves us TONS of time to spend the day doing things we love. 


Today, we drove up to Pickwick, TN for lunch with some of our best friends and then drove around looking for fishing spots for Matt and the boys.  Lazy Sunday afternoon, for sure!!!

It’s also the time I take a few minutes to put together my meal plan for the week and make sure I’m prepared!!! It literally takes me 30 minutes or less to create my meal plan and then prep the food.  I know from past experience that when I don’t take the time to do this, my week can really go off track!!!! 






So, my meal plan is done for the week ahead!!! There is not a whole lot of prep to be done.  I grilled up a lot of chicken yesterday, and I will steam most of my veggies in bags. 

A couple of things I’ve learned this past week following the Countdown to Competition plan from the 21 day Fix Extreme that I created:


1.  My body and asparagus are NOT agreeing!!! I love that stuff, but that’s not gonna work for me.


2.  I do not enjoy just eating meat for my proteins, so I’m gonna add in some cottage cheese for protein to spice it up. I am NOT competing for anything obviously, and cottage cheese is one of my favorite forms of protein, so that works for me.


3.  This was MUCH easier to follow than I expected!  I did pretty well on this plan, and stuck to it 90% of the week. I cheated with a couple pieces of pizza and some fried veggies, but other than that, I was ON IT!  


4.  Mentally and physically, I feel so much stronger! My body is feeling leaner and I can definitely see more muscle, which was my goal!!! I haven’t stepped on the scale to see if I’ve lost weight, because quite honestly…that wasn’t my goal.  I’m happy with how I look and feel, so I’m taking that off the table.  Very freeing, I assure you!




I honestly love being able to experiment and see what works best for me.  First of all, I have to focus on making a meal plan and program work to fit MY lifestyle.  The workouts have to be quick – 30 or 45 minutes tops.  The meal plans have to be simple.  I want to be able to grab and go.  Especially being home with the boys for the summer. I can take more time to prepare dinner, but everything else must be on the go if need be.  I love being able to pack up and head to the pool or to the lake and knowing I have things I can just grab and stay on track.


I have a confession to make here:  I have totally fallen OFF the no Diet Coke wagon.  I have had at least four in the past week!  And I hate they way they make me feel.  So, I’m recommitting to NO DIET COKES this week!!!! Which is good, because I’m gonna need the mental clarity…


This week is gonna be super crazy!!! Packed with good things but still wild.

A few of the things we have planned include: 


  • Trips to the pool with friends
  • Book club
  • $2 movies on Wednesday
  • Birthday parties
  • A Jackson Generals baseball game
  • An awesome women’s Bible Study
  • Two cookouts with friends for the 4th 
And on top of that, I have a PACKED work schedule for coaching that I can work around our family activities!!! How cool is that???  

Team calls, training calls, and a Coaching Opportunity call all this week!  It’s busy but I love it!!! And when you love something, you just make it work, right???

On top of that, I’m hosting a Summer Salads and 4th of July group this week in which we are sharing lots of new and exciting salads and summer desserts.  With the 4th rolling in, I want to make sure I have some good recipes to fall back on.  I really want to share them with people who are interested as well. So! As you can see, it’s a busy but fun week ahead!!! I am committed to sticking with this plan for at least three weeks to see how my body changes.  I am already excited to see the changes that are happening, and I can’t wait to see what happens a week from now!
