Shrimp Tacos

I have said this before, buy my family loves shrimp!  My boys will eat pretty much anything that has shrimp in it.  So shrimp tacos is a fun and easy meal to make on a weeknight.  It is a great mix of carbs, protein, vegetables, and healthy fats. It is something super healthy and clean that the boys will chow down on, so it is in our regular dinner rotation. 






Ingredients
1.5 lb thawed shrimp, peeled and deviened
2 tbsp EVOO
1/2 tsp cumin
1/2 tsp chili powder
salt and pepper to taste
1 cup shredded cabbage
1 avocado, sliced
1 tomato, diced
1/2 onion, diced
1 red bell pepper, sliced 
lime cut into wedges
jalapeno pepper, sliced (optional)
cilantro
1 pkg of whole wheat tortillas


  1. Combine the EVOO, cumin, chili powder, salt and pepper.  Pour over the shrimp to coat it.
  2. Heat 1 tbsp of olive oil in a skillet and saute shrimp until pink.  This only takes about 6-7 minutes.  They cook very quickly, and over-cooked shrimp tends to be rubbery.
  3. Place five or six tortillas between two wet paper towels and microwave for 20 seconds.  This just warms them and softens them a little. 
  4. Next, you just build your taco to suit your tastes!  I love it with everything on it!!

I also served brown rice and refried beans, which are both great healthy carbohydrates that will fill you up.  Milo loves refried beans!  I have to watch to make certain he doesn’t eat TOO much of them! Honestly, we were too hungry to stop and take a picture of our assembled tacos, but they looked a lot like this:
