Eat The Rainbow Bowl

Tried this new recipe this week and HAVE TO 100% recommend it! My boys were skeptical at first… as the always are with new foods… but it was a MAJOR HIT! It also packs a BIG punch with colorful veggies and gives your family OPTIONS when eating health, which I always finds works in our “mom favor”!

INGREDIENTS

2 tbsp olive oil
2 cloves garlic, minced
1 lb cubed chicken breast
salt and pepper to taste
red pepper, chopped
red cabbage, chopped
red onion, chopped
carrots, shredded
4 tbsp coconut aminos
3 tsp sesame oil
1 clove garlic, minced
2 tsp honey

DIRECTIONS

  1. Heat oil in a skillet over medium heat, and sauté garlic for 2-3 minutes. Add chicken and season with salt and pepper. Cook until all chicken is cooked all the way through.
  2. Cook quinoa and or brown rice according to package directions.
  3. Make dressing by combining coconut aminos, sesame oil, garlic and honey. Whisk together until combined.
  4. Prep bowl by adding rice/quinoa mixture, chicken and topping with desired veggies and dressing!

You’ll have to let me know if you love this one! For my Portion Fix gals, this is one yellow, one red, and 1-2 green containers + 1 spoon!
