Chicken Fried “Rice”

Ingredients

2 lb raw ground chicken meat
5 Tbsp coconut aminos
1 Tbsp sherry
1 clove garlic, finely chopped
2 medium carrots, chopped
1 cup fresh frozen peas
2 bags of frozen riced cauliflower, steamed in microwave
2 tbsp coconut oil
4 eggs, lightly beaten
4 green onions, chopped
salt and pepper to taste

Instructions

  1. Combine chicken, 1 Tbsp coconut aminos, sherry, and garlic in medium bowl. Mix well, and set aside for 30 minutes.
  2. Steam carrots for 2-3 minutes and then add peas for another 2-3 minutes or until they are bright green. Drain.
  3. Cook chicken in saute pan with 1 Tbsp coconut oil.
  4. Add riced cauliflower to saute pan with 1 Tbsp of sesame oil, other veggies. Add 4 Tbsp coconut aminos. Mix all together and cook for 3-4 minutes.
  5. make a well in the middle of the cauliflower mixture, and break eggs. Cook until they start to set and then mix with veggies.
  6. Stir together well and serve with green onions on top
