Carrot Cake Muffins & My Weekly Meal Plan

I love muffins. Like seriously…..could get super gushy about them. They just evoke a “FEEL” don’t they? They’re comfort food in the best kind of way. And while I love to eat clean, that doesn’t mean I have to give up my favorite foods!  I tweaked this recipe I found in a Southern Living cookbook to make them fit MY style of eating!

1 1/2 cups almond flour

1/2 all purpose flour

2/3 cup brown sugar

2 tsp baking soda

1/2 tsp salt

1 1/2 tsp ground cinnamon

1/4 cup olive oil

1 tbsp vanilla extract

2 (8 oz) cans crushed pineapple in juice, drained

2 large eggs

2 cups shredded carrots

paper baking cups

cooking spray

  1. Preheat oven to 350 F. Combine first 6 ingredients in a large bowl; make a well in the center of mixture.
  2. Whisk together oil and the next 3 ingredients; add to flour mixture, stirring just until moistened. Fold in shredded carrots. Place paper baking cups in 18 muffin cups, and coat with cooking spray; spoon batter into the cups, filling two-thirds full.
  3. Bake at 350 F for 22-25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans to wire racks. Serve warm or at room temperature.

My Meal Plan for This Week

I share my meal plan with my team every single week, but I try to share it here every so often!  I never thought I would be the mama who made time for a meal plan, let alone clean eating!  But when I realized the MAGIC that happens by simply making a PLAN, I was in for LIFE!

I do follow a plan that allows me to eat ALL the food groups (I’ll never cut carbs 😉 ). But I’ve also been more mindful and learning about how to actually conquer my MINDSET when it comes to food.  Some very basic concepts like Veggies Most, Water before every meal, Getting the JUNK out of the house that is most tempting.

I am NEVER at a point in my health and fitness where I remain stagnant. I am always challenging myself to grow more. To lead better. To find ways to engage my family and friends and make an IMPACT in the lives around me.  God didn’t give up on me, so I refuse to give up on you if you’re ready to FIGHT for your health friend.
