Broccoli Salad with Greek Yogurt

What I’m Eating This Week

I started Week 12 today of my 13 week program…pretty surreal!

I rarely commit to a workout program so long, but it has been oddly refreshing! I haven’t nailed it and had some pretty nasty PMS in there that got me off track, but overall, having a plan and being challenged regularly has been a lot of fun! (I saw you roll your eyes.. wink, wink).

 

Broccoli Salad With Greek Yogurt

Ingredients

  • 2 small or one large head of broccoli (or 1 pound broccoli florets)
  • 1/2 cup Greek yogurt
  • 1/4 cup mayo
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons minced onion (more if you like)
  • 1/3 cup dried cranberries
  • 1/2 cup toasted walnuts( roughly chopped)

Directions

  1. Put minced onion in small bowl of cold water to take away some of the bite.
  2. Wash and prepare broccoli into small bite-sized florets. If using whole broccoli, peel large stem, cut thin slices on the diagonal then cut slices into small matchsticks. Put broccoli in large mixing bowl.
  3. In a small bowl, mix yogurt, mayo, vinegar, sugar, salt and pepper. Add to broccoli along with onions and mix.
  4. Add cranberries and toasted almonds. Mix and refrigerate until ready to serve. Make a day ahead if you like. Leftovers also keep well for several days in refrigerator.

Refeed Day

Today was actually Refeed Day. We have gotten 4 of these in this 80 day program.

When you consume carbs, they’re broken down into glucose, or blood sugar. Your body uses this blood sugar as its primary fuel source. Glycogen — carbohydrates that are stored in your liver and muscles — acts as your body’s back-up fuel source.

While hard exercise is obviously great for you, it also breaks you down. If you add a calorie deficit into the mix, things can get rugged: Those glycogen stores become depleted, your body exists in more of a stress state, and it wears you down mentally.

Physically, you can address the situation with proper rest and recovery. Dietarily, it’s a little trickier. Obviously, you can eat more, but if you’re trying to lose weight, porking out to feel better was how you got in this mess to begin with.

So you want to be a little controlled about it — that’s where refeed day comes in.

Not to be mistaken for a cheat day; on a cheat day, you just go for it and eat a bunch of untargeted garbage. That won’t work quite the same…

We get what are called “dirty carbs” on these days. Starchy, refined carbs that burn off fast. I had corn flakes, a bagel and a french bread sandwich today!

Week 11 Results

Oh my goodness, please excuse my dirty mirror…that’s where Milo brushes his teeth, and he could make a mess in a barn!

I realized about a week ago, I was letting my “RESULTS” with this program consume me so much that I’d sort of lost the JOY I find in working out and learning new things about my body through these challenges. I was getting bogged down in wanting to FASTER results and do it BETTER.  When really, I actually LOVE this program and have learned so much about my body! And I promise you that when I let go of the worry and the results mentality, I started to see real progress!  A little late in the game, I realize, but none the less, it was an important less for me.

When I allow Him to, God takes each of these programs and teaches me something new about myself. But I’ve always got to be willing to LET GO, do the WORK, and trust Him with the results.

And I’ve applied that to so many other areas of my life these past few years:

❤️I’ve become more diligent as a wife and mom and opened my eyes to the needs of my family instead of being so self involved in how I feel about ME!

❤️I’ve been able to grow a business with that same work ethic in the pockets of my time around my family and FT job, because I stopped waiting for someone else to do the work for me.

❤️Ive grown in confidence in who God CALLED me to be instead of looking around at everyone else and trying to measure up to who He called someone else to be! (FREEING , sister, FREEING!)

❤️I’ve grown BOLDER in sharing my faith through my fitness journey, because it all is for nought if I don’t point others to Him!

So I wanna encourage you today, to stop holding onto THE PERFORMANCE and the RESULTS you’re trying to achieve and just SHOW UP! Without fail. For yourself. For your family and to end that crazy cycle we often find ourselves on!!!!

It leads nowhere friend. But perseverance pays off! God can use ANYTHING in my life when we stop making I stop making it just about ME!

Round 2 of 80 Day Obsession

Like I said, I LOVE this program!  The workouts, the food, the community! So much so that I’m committing to Round 2 after we get back from Mexico later this month!  I will alter the timed nutrition a little to suit my time table a little more, but I’m excited about doing it again with all the knowledge I’ve gained and leading a NEW round of women in making their health a focus as well!
