Smashed Potatoes Recipe

My family LOVES these smashed potatoes, and they’re SO easy to make. They eat like a French fry but without the junk commercial companies put in them!
Crispy Garlic Smashed Potatoes
Ingredients:
• 1.5 lbs small baby potatoes (gold or red)
• 2–3 tablespoons olive oil
• 3 cloves garlic, minced (or 1 tsp garlic powder)
• Salt, to taste
• Freshly ground black pepper
• Optional toppings: fresh chopped parsley, grated Parmesan, or a drizzle of balsamic glaze

Instructions:
1. Boil the potatoes
Place the potatoes in a large pot and cover with water. Add a big pinch of salt.
Bring to a boil and cook until fork-tender (about 15–20 minutes). Drain and let them dry for a minute.
2. Preheat oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
3. Smash the potatoes
Place the cooked potatoes on the baking sheet. Use the bottom of a glass or a potato masher to gently flatten each one to about ½ inch thick.
4. Season and oil
Drizzle the olive oil over the smashed potatoes. Sprinkle on the minced garlic (or garlic powder), salt, and pepper. Make sure they’re well coated.
5. Bake until crispy
Roast in the oven for 25–30 minutes, or until the edges are golden and crispy.
6. Add toppings (optional)
Sprinkle with fresh parsley or Parmesan right after they come out of the oven.

Tips:
• For extra crisp, broil for the last 2–3 minutes.
• Want it dairy-free? Skip the cheese and drizzle with a little lemon juice or balsamic.
