21 Day Fix Extreme – Week 2 Meal Plan

Week 1 of 21 Day Fix Extreme is in the books!!!


I was honestly a little anxious about jumping into this one. I had gotten a little lax on my diet and had been eating some things I wouldn’t have if I was being more strict.  I actually gained about 5 lbs, because of some stomach issues I was having and not being able to work out.  The pounds didn’t bother me so much as the inches!! My clothes had gotten a little tighter, and I was super bloated! Partly because of my health issues and partly because of what I was eating.


I am participating in an exclusive challenge group of other coaches who are doing the program as well, and it has been such amazing motivation to stick with my plan and get the workouts in each day.

We rate our workouts, food, and water intake at the end of each day just like in my own personal challenge groups.  Knowing that I have to report about my day definitely motivates me to not veer from my plan.


So going into this week, I was READY to get back on track.  I was finally able to get my workouts in, even though I had to modify a little.  I really enjoyed Insanity Max 30, but I absolutely love lifting weights in my workouts, and Max 30 didn’t utilize them at all!

The workouts are definitely more intense than the original 21 Day Fix. The idea is to utilize as many muscles as possible with each workout to build strength in your core and to burn more calories.  Like Autumn likes to say, “Multiple muscle groups means we’re burning more calories!”

 



And boy is she right!  Since I’ve been lifting weights again,  I can definitely tell I am hungrier!  But I stuck with my plan and have already lost 2 lbs this week!  I am prepped and ready for Week 2.  I’m trying some new recipes this week too, which is always fun.  Here is my meal plan for the week.



I’m really excited to try the butternut squash soup.  It sounds delicious!  And it’s going to be super cold and wet tomorrow, so it should be perfect for a day like that.  I’ll share the recipe if it’s a success.  I have prepped my food for the week.  I boiled eggs, steamed some cabbage, broccoli, cauliflower and carrots.  Peppers and celery are chopped and bagged, and I am going to cook up some chicken as soon as it’s thawed.



  • I am working on my March challenge group this week and putting the details together.  
  • I have a new coach apprenticeship program beginning March 2nd with some excited new coaches!
  • My current challengers are planning and prepping today and making huge strides in their health!!!!
God has reminded me this past week that everything in my life is His!!! That includes coaching, my challenge groups, successes and failures! So, this week, I am prayerful about where He will lead me as I plan for the upcoming month.

I am blessed daily by this coaching opportunity He led me to, and I pray that I can spread those blessings!!
