Spinach, Tomato, and Sausage Quiche

My team came over this weekend for our Christmas party, and we had such a good time!!! We ate, laughed, ate some more, played Dirty Santa and exchanged some awesome gifts!


Not all of our team could be with us this day, but we had a blast, and we missed the others!

We were not entirely clean with our eating, but that is ok.  We all got our workouts in that day and we enjoyed our treats of Oreo Balls and mimosas!  It’s all about balance right?

We enjoyed Mimosas, Mixed fruit, my veggie – sausage quiche, oreo balls and a sausage and egg casserole.  I wish I had taken more pictures, but we were having so much fun, I forgot!


I did want to share my quiche recipe though.  It was so easy and my coaches loved it!!! I promised I would type it up, because I just made it up as I went. 

Veggie and sausage quiche





Spinach, Tomato and Sausage Quiche


Ingredients
1 pie crust ( I used a premade one)
4 whole eggs
6 egg whites
1/2 cup milk
1 cup fresh spinach
1/2 cup sliced tomatoes
1/3 lb turkey sausage, cooked
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp no salt added Cavenders Greek seasoning


Instructions
1. Preheat oven to 350 degrees.
2. Roll out pie crust and place in pie pan.
3.  Mix eggs, milk and seasonings together in a bowl.
5. Place spinach, tomatoes, and sausage in the bottom of the pie pan on top of crust,
4. Pour egg mixture over top. 
5. Bake in oven for 40-45 minutes or until a knife comes out clean.


This quiche is totally adaptable to suit your family’s tastes!!! A lot of my friends love deer sausage and this is a perfect recipe to incorporate that. 


You can swap up the veggies and add zucchini, kale, different seasonings/  Rosemary is very good in a quiche…whatever works!!! Sometimes I add cheese as well.  

Cavender’s Greek Seasoning.  I use it in everything!



Overall, it is a very healthy version of quiche.  The pie crust of course is a little indulgent, but it is a treat.  


I also make this as a frittata most times and just omit the crust altogether.  I have high cholesterol naturally, so I used more egg whites to lower the cholesterol content.  


This would make a great holiday recipe for all those Christmas brunches that are coming in the next couple of weeks.  If you make it, let me know how you like it.  Or if you modify it with something else.  I’m always looking for new ideas!
