Zucchini Chips – A Fixate Recipe

I am beyond excited that Autumn Calabrese finally came out with a cookbook that coordinates with my favorite workout programs!!!! The 21 Day Fix is where I began my fitness journey, and now I am doing the 21 Day Fix Extreme.  Both AMAZING workout programs, but it’s the meal planning portion that really change my health!





If you’re not familiar with these programs, the 21 Day Fix teaches you to eat proper foods in the proper portions.  And let’s face it, portion control is a problem for all of us!  The program comes with these nifty little color coded portion control containers.  You figure up your calorie needs and find out how many containers for each food group I need for the day.  And I just make sure I fill those with foods that are listed for each container and get them all in!







So simple! And you can eat all kinds of yummy foods!!




But up until now, there hasn’t been an official cookbook with recipes and container suggestions for the recipes.  Well, now there is one!!!And I have already given 3 away to some new challengers!!!! It officially releases on Monday, July 14th!  I have been making some of the recipes and I’m sharing them with you here.  This one is a winner!

I love chips, but the fried aspect is not part of my health goals, and it hurts my stomach really bad!


So, these zucchini chips are awesome for me.  They’re crisp and a little salty and totally hit my chip fix!!!

Exclusive Fixate Cookbook Recipe Sneak Peek Zucchini Chips

2 whole zucchini, sliced thin
1 Tablespoon of olive oil
1/2 tsp. sea salt


1. Preheat oven to 225 degree.
2. Place zucchini slices in one layer between paper towels to help draw out liquid.
3. Line two large baking sheets with parchment paper.
4. Place zucchini slices on prepared baking sheets and brush with olive oil.
5. Sprinkle with salt.
6.  Bake for 2 hours, or until golden brown and crispy.
7.  Cool completely before serving.


1 Green container and 1/2 spoonful
