Grilled Pizzas from Scratch!

Grilled Pizzas from Scratch!

I have been thinking about making grilled pizzas for a while now.  And then yesterday morning, Bobby Flay made them on his cooking show and made it look so easy!!! So, I thought, why not???

I actually had most of the ingredients on hand, but I stopped and got a few extras to top them with for fun.

This was something that was easy for the boys to help me with.  And if anything, my goal is to teach them that eating healthy can be fun, easy, and yummy!  So, we made our dough yesterday afternoon and then fired up the grill to throw them on.

Henry kneading the dough!

I chose to make some traditional pizzas for the boys with pizza sauce, mozzerella cheese and turkey pepperoni. Then I added some fun things for myself and Matt.  I grilled zuchinni and sirloin to top them with. I also bought some tomatoes and ricotta, and the boys picked some fresh Basil from our garden.

These were delicious!!! Even Matt, who is a traditional pizza kind of guy, gobbled them up! And I knew exactly what went in them, which makes this momma happy.  Here is my pizza crust recipe that I used.  After that, add whatever you want!

Pizza Crust Ingredients
3 1/2 cups of all purpose flour
1 package pizza crust yeast
1 tablespoon sugar
1 1/2 teaspoons salt
1 1/3 cups of warm water (120-130 degrees F)
1/3 cup olive oil

1. Start charcoal fire or preheat gas grill.
2. Combine 2 cups of flour, undissolved yeast, sugar, and salt in a large bowl.  Add warm water and oil.  Mix until well blended, about 1 minute.  Gradually add enough flour to make soft dough.  Dough will be sticky and should form a soft ball.  Knead dough on floured surface.  Add additional flour if necessary.
Knead for about 5 minutes.
3. Divide dough into 6- 8 portions, depending on the size of each pizza you desire.
4. Place on an oiled sheet pan and brush with olive oil on top.  Cover with plastic wrap and allow to rise in a warm place for an hour or until doubled in size.
5. Roll out each pizza on a floured surface.  These will make an 8-10 inch pizza round.
6.  Brush again with olive oil and sprinkle with salt and pepper.
7.  Place directly on a hot grill and cook for 3-4 minutes on each side.  Watch closely!  They will burn if you are not paying attention.
8.  Top with desired toppings and enjoy!

1 hour later…so cool
on the grill

Next time, I am going to play around with my own homemade spicy pizza sauce.  And maybe some shrimp.  The possibilities are endless!

Enjoy!!!
Rachel
