Kid-Friendly Clean Eating Mini Pizzas

Kid-Friendly Clean Eating Mini Pizzas

If you’re anything like me, you are always looking for things that are healthy that your kids will not turn their noses up at! Now, I have to say, my kids are pretty good about trying new things…at least tasting them.  We have a rule at our house – you have to at least try it once.

They have discovered some pretty incredible treats this way.  Both of my boys LOVE sweet potatoes, which are extremely good for them.  They love fish and broccoli.  Henry loves cauliflower, and Milo could eat a whole plate of quinoa!

And really, what kid doesn’t love pizza?  And it’s even better when they get to help you make it!!!

So, here is a quick and easy way to get some great food into them and allow them to help!

Ingredients

Whole Grain Mini Pitas (I usually find these in the deli section)
1/8 cup of organic pizza sauce (no sugar added)
2 tablespoons chopped bell pepper (any color – my kiddos love red and orange)
2 tablespoons chopped onion
2 tablespoons diced tomatoes
1 tablespoon of sliced black olives
1/4 cup grated mozzarella cheese

1. Preheat oven to 350 F.
2. Assemble pizzas with sauce on bottom, followed by veggies and topped with cheese.
3. Bake in oven until cheese has melted. Enjoy!

Of course, it is totally optional to add pepperoni and sausage.  Whatever meats your children enjoy on pizza.  I think in moderation, those things are absolutely ok!  We buy turkey pepperoni for the boys a lot, and they love it!

I hope this works for some of you!

xoxo,
Rachel
