Roast Pork Loin with Vegetables

Here is a super simple supper idea!  My boys love pork, so I make it at least once per week.  The pork loin is pretty lean, so I don’t mind!  I literally throw all of the ingredients together on a baking sheet, and roast it together.  SO EASY!




Ingredients
1-2 lb pork loin

4 tsps fresh rosemary or 2 tsp dried
1 tsp course salt
1 tsp ground pepper
4 garlic cloves finely chopped
1 lb potatoes, cubed
1 lb cremini mushrooms
1 lb fresh green beans
2 tbsp extra virgin olive oil


Everything on one baking sheet!





1.Preheat oven to 375 degrees. 
2. Combine the rosemary, salt, pepper, and garlic.  Rub into pork loin.
3.  Season the vegetables to taste with salt and pepper and toss with olive oil.
4. Lightly cover baking sheet with olive oil, and place everything on it.
5. Place ingredients in oven, and roast for at least 35-40 minutes, depending on the size of the roast.  The temperature should read around 160 for a fully cooked pork loin.


Yummy AND healthy!
